Pan Griffithisis is the bartender of the Oz Bar - which is the biggest and most popular bar in all of the Emerald City, not to brag. She has worked there since she was 16; she's now 28.
In her spare time when she's not running the bar, she either balances finances or invents new cocktail recipes. Her most popular and interesting cocktail is called GrowAPair, and it causes the drinker to grow five extra sets of arms. When the drink wears off and the arms fall off, Pan collects them and turns them into artworks and sculptures.
Theemerald admires her, and Pan is impressed by Theemerald's ability to make a cocktail that turns the drinker into a rat. When Theemerald starts selling her cocktails outside her bar, Pan grudgingly takes her on as an assistant/apprentice. Because of their competitiveness, they have a rocky relationship.
Condesen brings her tourists to Pan's bar. Pan also buys "cabbages" from her to put in the cocktails.
Lillian comes to Pan's bar when she grows tired of "cabbages". Once there she sees several members of the Cambodian gang there and decides to dress up as a bartender and steal their wallets. Pan catches her and kicks her out.
Redav is a regular at Pan's bar, and has provided her with many arms.
